Columbus Artisan Salame
It's no coincidence that "artisan" comes from artigiano - an Italian word that refers to the craft of hand making products, resulting in unique and individual qualities. Anyone can use a simple recipe. But like a master chef or winemaker, our master salumiere (an expert salame maker) brings the recipes to life using a little art, a little science and lots of passion and love.
Columbus Artisan Salame is a collection of gourmet salame varieties that can be found in Italy today. These authentic products are truly unique - hand-stuffed and tied using natural casings, minimal spices and naturally aged from 21 to as long as 90 days depending on the type of salame.
We use 100% hand-trimmed pork from hogs that are raised to strict standards - fed 100% vegetarian diets, never ever given antibiotics or growth hormones and raised to the highest standards in reduced-stress environments. All of our salumi is Gluten Free, have no MSG and 0% Trans Fats.
They certainly stay true to the artisan name!
Columbus Classic Salame
In this classic Italian tradition, authentic Columbus salame is made with our unique Fiore bloom - a soft white coating of aromatic mold, similar to the rind of Brie cheese.
Fiore is one of the secrets of our premium salame. During the dry aging process, the Fiore develops to allow the salame to age naturally and enhance its flavor. For your convenience, we remove the Fiore from some of our products, yet the superior flavor is maintained.
We are proud that all of our salumi are Gluten Free, have no MSG and 0% Trans Fat.

Products we carry
Often considered the king of Italian salame, Felino is traditionally made in the Parma region of Italy. Stuffed in a thick natural pork casing called culare, the fresh meat is then aged extremely slowly to achieve its legendary smooth texture and aroma.
Our Finocchiona is seasoned with wild fennel seeds which give it an alluring cool, sweet flavor - an intriguing balance to the mellow texture and aroma of 90-day aged coarse ground fresh pork. We use an imported, natural, double-layered pork casing cut and stitched together to reach gigantic proportions. Not only spectacular in its looks but outstanding in its taste.
If you're searching for a classic, you've come to the right place. Salame secchi was among our first creations and it remains one of our most popular. Its flavor is mellow like the subtle flavors of Italy and then it's packaged in a natural casing and hand-tied for a hand-crafted finish.
A blend of cracked pepper and fresh garlic combined with a medium grind of extra-lean pork give our genoa salame its aromatic mellowness. Hand-stuffed and slowly air-dried for two months, it's the perfect addition to sandwiches, in an antipasto or as a topping on pizza. You can even slice it into a hearty country salad. We remove the Fiore so it can be sliced easily.
Italian Dry Salame
Using a complement of spices, full-bodied wine and select cuts of pork, our Italian Dry Salame brings out the richness and aroma unique to this slow-cured specialty meat. It is an Italian classic with a San Francisco twist. There's no limit to how you can enjoy it -in an antipasto, chopped into a salad, piled on a sandwich, popped straight into your mouth. Delicious. In a convenient grab and go (10oz) size that you can slice at home or bring to a picnic.
Robust with sweet fennel, hot peppers, paprika and red wine, our sopressata is every bit as authentic as the hand-cut, hand-crafted varieties that were made centuries ago. The distinctive flavor of the coarsely ground meat is brought out by a natural, two month aging process. This rich salame is delicious as a quick snack, in an antipasto or with a hearty cheese (a well-aged pecorino or provolone, for example.) In a convenient grab and go (10oz) size that you can slice at home or bring to a picnic.
Add our pepperoni on pizza or in calzones for a spicy zing! Pepperoni is certainly an ideal topping for pizza, but it can also brighten up other meals like salads, sandwiches, and pastas.
An Italian delicacy that dates back to at least the 12th century, prosciutto is cherished for its texture, color, fragrance and taste. Our prosciutto comes from the highest quality fresh hams that are gently massaged with a hint of salt and then placed in our aging rooms for the slow drying process. Our Curing Masters check the prosciutto daily in the traditional Italian manner handed down for hundreds of years. When cured to perfection, the prosciutto is then hand-trimmed by our Master Salumiere.

Hand-rubbed with a fresh blend of fiery peppers, and a variety of spices. Our whole cut turkey breast is smoked during its slow roasting to accentuate its great flavor.
Cured Maple Syrup Honey Coated Turkey Breast
Before we pop our turkey in the oven to be slow-roasted, we baste it with a maple and honey glaze. Not too sweet, but oh-so good. Made with whole turkey breast.
Roasted Pork Loin
Seasoned with sprigs of fresh rosemary and sage, our lean, center-cut pork loins are roasted for tenderness, then seared to lock in the flavor.
Cracked Peppered Turkey Breast
Hand-rubbed with cracked black peppercorns and a variety of spices, our whole cut turkey breast is hickory smoked during its slow roasting to accentuate its great flavor.
